The Bunmei Gincho series is a set of knives made by Yoshikin (Yoshida Metal Industry Co), who also make Global knives.
Style and manufacture
These knives are manufactured using the same superior steel in in Global knives, but conform to a more traditional Japanese design. The knife blades are extremely thin, sharp, and retain their cutting edge for the utmost accuracy, as well as being tremendously resistant to rust.
In contrast to the combined blade-and-handle style of Global knives, Bunmei Gincho knives have separate handles made from traditional Japanese chestnut wood. These handles are designed for warmth, comfort and grip, and sit in the hand very well.
Our views and advice for buyers
The blades are sharpened with the traditional Japanese single bevel, and the standard issue knife has been pre-sharpened for right-hand use. Left handers may need to investigate specially sharpened blades to achieve the highest level of accuracy.
These knives are the only brand designated as a recommended product by the Japan Food Hygiene Association, and are designed and manufactured to the the very highest specifications. Each of these knives is truly a work of high artisanship – we are big fans!
