Global is a top brand of knife made by Yoshikin of Japan. The company was founded by Minoru Tsuchida in 1985, meaning Global have recently celebrated their twenty-fifth anniversary, commemorated with a special knife set. Their knives are known for their distinctive one-piece stainless steel design, often with hollowed out handles for perfect balance.
Style and manufacture
The steel alloy used to manufacture Global knives is considerably harder than that used in conventional European knives such as Wusthof. This superior steel allows for a thinner blade, which can be sharpened to a more acute angle. This results in an extraordinarily sharp knife which retains its edge for longer, increasing both the safety and accuracy of the knife.
Global knives are renowned for being light, incredibly strong, and particularly well balanced. They have a distinctive design, the handle and the blade being formed from one continuous piece of metal, with grip provided on the handle by a series of black indentations.
In the past decade Global have diversified their range to incorporate several highly specialised knives, many of which are tailored towards Western cooking. Some of these are the new ‘tomato’ knife, and a specialised crab/lobster knife.
