Udon/Soba Kiri (Noodles)

Udon Kiri or Soba Kiri is a very specialised knife used for making Udon or Soba noodles. The knife can also sometimes be called a Menkiri Bocho.

To make the noodles the dough is first flattened, and then cut into this strips to produce long rectangular noodles. The knife is usually heavy to aid in the cutting of the noodles, and usually has an integral handle, cut into the top of the cleaver-like blade.
